Spring Chicken, Corn, and Potato Chowder (24 oz., for 2)


This soothing one-pot meal is prepared with shredded chicken, corn, onion, celery, bell peppers, garlic, carrots, red potatoes, winter squash, spinach, light cream, paprika, thyme, black pepper, salt, Marsala wine, and fresh parsley, all cooked together until just right. Garnished with green onions.  Goes well with a hunk of bread from the breadbox. Serves 2.
