“Pasta Fazool” with Eight Vegetables and Cannellini Beans (for 2)
Pasta e Fagioli (Pasta Fazool) is a slow-simmering one-pot Italian soup-meal filled with a cornucopia of veggies: zucchini, onions, celery, mushrooms, eggplant, carrots, and garlic along with San Marzano plum tomatoes, cannellini beans, fresh basil, parsley, oregano, kale, and tiny pasta (orzo or ditalini). It is as nourishing as it is tasty – a perfect late wintry meal for two. Grated Parmesan cheese offered on the side.
