8-Vegetable Pasta Fazool (for 2)
Pasta e Fagioli (Pasta Fazool) is a hearty one-pot Italian soup-meal filled with a cornucopia of garden veggies: zucchini, bell peppers, onions, celery, eggplant, and garlic along with San Marazano plum tomatoes, red kidney beans, spinach, fresh basil, parsley, oregano, and tiny pasta (orzo or ditalini). It is as nourishing as it is tasty – a perfect light spring meal for two. Sprinkle Parmesan on at the finish.
