“Pasta Fazool” with Eight Vegetables and Borlotti Beans (for 2)
Pasta e Fagioli (Pasta Fazool) is a hearty one-pot Italian soup-meal filled with a cornucopia of veggies: zucchini, onions, bell peppers, celery, mushrooms, eggplant, and garlic along with San Marzano plum tomatoes, borlotti beans, fresh basil, parsley, oregano, and tiny pasta (orzo or ditalini). It is as nourishing as it is tasty – a perfect late autumn meal for two. Grated Parmesan cheese offered on the side.
*Parmesan may be omitted upon request (ask for the vegan version.)
**Borlotti beans, or cranberry beans, have a nutty flavor, creamy texture, and are popular in Italian and Portuguese cuisine. We soak the beans overnight, then simmer on low for over an hour in a stockpot filled with carrots, onion, celery, herbs, and water.
