Pasta with Nana’s Classic Bolognese Sauce (for 1)


Jay’s “Nana” came over on a boat from Italia, married an Italian barber, spoke broken English her entire life, and though she never wrote a cookbook or opened a restaurant, boy could she cook. Her classic Bolognese sauce called for simmering ground beef (we use Angus beef) with ground pork, then adding San Marzano tomatoes, onions, carrots, celery, and garlic, simmer some more before stirring in light cream and table wine and cooking for hours over a low simmer, slowly intensifying and reducing the sauce. Once the pasta is tossed with the sauce, shredded Parmesan and fresh parsley go over the top at the finish. #MammaMia
