Penne Alla Vodka with Shrimp, Spinach, Wild Mushrooms, and Fresh Mozzarella (for 1)


For Jay’s Penne Alla Vodka with Shrimp, Spinach, and Wild Mushrooms, we first make the Vodka sauce — caramelizing onions and carrots with olive oil, then adding garlic, herbs, and vodka, and simmering until the alcohol cooks off.  San Marzano plum tomatoes are added and slow-simmered for over an hour. The robust sauce is pureed with light cream, Parmesan and tossed with penne, and combined with sauteed shrimp, spinach, and mushrooms. Garnished with fresh mozzarella and parsley.
