Polenta “Lasagna” with Mushroom Ragu, Risotto, and Mozzarella (for 2)

First, we make the the polenta crust, a slow cooked corn meal and Parmesan porridge . Then we make the risotto – the Italian rice dish made with short grain arborio rice which cooks up creamy, not fluffy. Then comes the chunkymushroom ragu – a vegeterian red sauce with onion, garlic, basil, cremini mushrooms, eggplant, tomatoes and tomato paste. In a large casserole dish we lay down the polenta crust, cover with risotto filling, top with the sauce and mozzarella and bake until bubbly.
