Jay’s fresh Rainbow Trout Fillets are spritzed with lemon and lime, brown butter, paprika, and kosher salt, roasted at 425 degrees, and served with a pat of Shallot-Lemon compound butter, twice-cooked roasted red potatoes seasoned with paprika, and roasted asparagus spears. The flaky trout melts in your mouth. (The trout is served “skin-on”.)
