Red Curry Tofu with Brown Rice-Red Quinoa Pilaf (for 2)


For Jay’s Red Curry Tofu with Brown Rice and Red Quinoa, tofu is tossed in a blend of gluten-free soy sauce, mirin, and sesame oil and then roasted to firm it up. Then we add a saucy coconut broth with garlic, onion, red bell pepper, mushrooms, red curry paste, lime juice (thickened with corn starch slurry).  This delectable plant-based dish gets served over a chewy brown rice and quinoa pilaf and garnished with cilantro.
