Roast Chicken Fricassee with Braised Summer Greens and Potatoes (for 2)
After this summer, we could all use some comfort food, no? Chicken fricassee – chicken roasted and braised with seasonal vegetables in white wine cream sauce – is classic comfort food. Jay’s version starts with a vegetable-laden sauce made with celery, carrots, potatoes, onion, garlic, vegetable-chicken broth, and braised summer greens, then adding pulled, boneless chicken, parsley, and thyme and simmering the pot until all the flavors meld together.
