Roasted and Grilled ‘Ratatouille’ Vegetables with Goat Cheese (for 2+)
This week we’re grilling and roasting a medley of ‘Ratatouille’ Vegetables – eggplant, zucchini, bell peppers, cauliflower, onion, and sweet potatoes. A healthy, colorful assortment of market veggies that will keep you nourished and replenished! Crumbled goat cheese is provided on the side.
(Veggies are tossed with a light herbal vinaigrette prior to grilling.)
