Creamy Broccoli and Tillamook Cheddar Bisque (for 2)


Jay’s updated vegetarian version of the classic Broccoli Cheddar Soup starts with sauteing a medley of vegetables – onions, celery, carrots, broccoli stems, and garlic then adding purified water, potatoes (for thickening), and herbs (parsley, thyme) and simmering until the potatoes and carrots are tender. Then we add lightly roasted broccoli florets, light cream, fresh spinach, and shredded Tillamook cheddar, simmer a little more before pureeing into a delightfully flavored bisque. Garnished with mini-broccoli florets. #YUM
