Roasted Butternut Squash and Corn Chowder (for 1+)


This tempting Southwestern-inspired chowder is filled with roasted butternut squash, corn, sweet potatoes, carrots, onions, celery, garlic, red bell peppers, parsley, cumin, and a hint of cream. It cooks until the vegetables and seasonings meld into one mellifluous river of flavor.  Super healthy — and chock full of veggies! Serves 1+ (18 ounces).
