Roasted Cauliflower Tikka Masala, Basmati Rice, Raita (for 2)


For Jay’s vegetarian version of Tikka Masla, cauliflower wedges are roasted, then gently simmered in an intensely flavored tomato curry sauce (seasoned with garam masala, cumin, turmeric, ginger, garlic, onion, and cardamom (we skip the cream along with carrots, potatoes, and chickpeas.  Served with a side of basmati rice and cooling raita (a cucumber-yogurt condiment). #Plant-forward
