Roasted Winter Vegetable Platter, Charred Eggplant-Chick-Pea Hummus (for 2+)


This dish celebrates wintry vegetables served with a roasted eggplant-chick pea hummus. (Jay’s market vegetable platter, depending on availability, may include roasted cauliflower, Brussels sprouts, French string beans, winter squash, broccoli, and carrots.) Our original roasted eggplant-chickpea hummus also includes lemon, garlic, cumin, and tahini (sesame-seed paste). Spoon the hummus over the warm vegetables. So simple, yet so delicious!
