Romesco Chicken Bowl, Roasted Butternut Squash, Brown Rice Pilaf (for 2)


Jay’s Grilled Romesco Chicken Bowl starts with chicken breasts marinated in an herbal lemon vinaigrette, grilled over a roaring fire, then diced and served over brown rice pilaf and topped with Spanish Romesco sauce, a “spread” made with pureed roasted peppers, almonds, crushed tomatoes, garlic, olive oil, sherry vinegar, paprika, parsley, and a dusting of cayenne. Roasted Butternut Squash and Broccoli appear as substantial garnishes.
