This week’s light dinner salad features chopped Romaine, arugula, *shredded carrots, red cabbage, goat cheese, sun-dried cherries, figs,  yummy walnut crumble, herb-roasted tofu, perhaps a roasted vegetable, and Jay’s housemade Sherry Vinaigrette. #PlantBasedDinner

*We shred real carrots for our salads – not those plasticized “pre-shredded” carrots found in factory-mixed salad bags sold in grocery stores.
