Red Posole with Chicken (Pozole Rojo de Pollo) and Blistered Cheese Quesadilla (for 1)


Red Posole with Chicken is a Mexican soup-chili made with dried, chewy corn kernels that are simmered for hours, then cooked with stewed tomatoes, shredded chicken, onion, celery, bell peppers, carrots, garlic, organic chicken broth, cumin, chili powder, dried (mild) chilies, parsley, and cilantro. (For sustenance, we’re adding pinto beans.) To make this a light dinner, we’re also including a griddled cheese quesadilla perfect for dunking into posole. #ColdWeatherCuisine
