Red Posole with Chicken is a Mexican soup-chili made with dried, chewy corn kernels simmered for hours, then cooked with stewed tomatoes, shredded chicken, onion, celery, bell peppers, carrots, zucchini, garlic, organic chicken broth, cumin, chili powder, dried (mild) chilies, and parsley.
