Red Posole with Chicken is a Mexican soup-chili made with dried, chewy corn kernels that are simmered for hours, then cooked with stewed tomatoes, shredded chicken, onion, celery, bell peppers, carrots, zucchini, garlic, organic chicken broth, cumin, chili powder, dried (mild) chilies, parsley, and cilantro. (For sustenance, we’re adding red beans.) Shredded Tillamook Cheddar added at the finish. #ColdWeatherAppetite!
