Red Posole with Chicken (Pozole Rojo de Pollo) with Blistered Cheese Quesadillas (for 2)


Red Posole with Chicken is a Mexican soup-chili made with dried, chewy corn kernels that are simmered for hours, then cooked with stewed tomatoes, shredded chicken, onion, celery, bell peppers, carrots, garlic, cumin, chili powder, dried (mild) chilies, and cilantro. (For variation, we’re adding red kidney beans.)To make this a light dinner, we’ve included a side of sour cream and griddled cheese quesadillas perfect for dunking into posole. Serves 2.
