Cioppino (Fisherman’s Stew) dates back to the 19th century when Italian immigrants in San Francisco turned the catch of the day into one-pot meals. Jay’s summertime version calls for an abundance of shrimp, scallops, Boston cod, stewed tomatoes, carrots, potatoes, onion, garlic, celery, and clam broth, with fresh basil and parsley woven in at the finish.
