Pineapple Fried Brown Rice with Sesame Tofu, Cashews, and Roasted Veggies (for 2)


Crispy roasted sesame tofu (with sesame oil, gluten-free soy sauce, rice vinegar) are tossed with roasted peppers, broccoli, cauliflower, and kale. The cornucopia of ingredients are cooked together and tossed again with chewy brown rice pilaf, ginger, chili-garlic sauce, diced pineapple (and just enough scrambled egg) for a nutritious and filling vegetarian dinner. Fresh pineapple and ginger nicely balance the umami flavor of the tofu and brown rice. Garnish with roasted unsalted cashews.
