Shrimp Alfredo Primavera with Thin Fettuccini, Mushrooms, Spinach and Broccoli (for 1)
First, we make a vegetable-laden alfredo sauce with light cream, mushrooms, spinach, green peas, garlic, and broccoli; Parmesan is whisked in, followed by egg yolks and Jack cheese. Shrimp are skillet-seared with garlic, sherry, and parsley, then combined with al dente fettuccine. Finally, alfredo sauce is gently folded into the seafood and pasta.
