Skillet “Paella” with Shrimp, Chicken and Sausage (for 1)
Paella is a classic Spanish dish made with seasoned rice and a combination of seafood, sausage, chicken, and other meats. Jay’s Skillet Paella starts by sauteing onions, yellow peppers, garlic, and stewed tomatoes, then adding smoked sausage (browning it) and stirring in saffron (or turmeric), paprika, annatto, thyme, and organic chicken broth, short-grain Calasparra rice, and boneless chicken and bringing it all to a simmer. After about 20 minutes, sauteed shrimp are stirred in, along with minced fresh parsley and green peas. The result is a wondrous one-pot meal filled with soothing flavors and textures. #ONEPOTCUISINE
The name “paella” refers to the “paellera”, a large pan that paella is traditionally cooked in. It looks like a flat wok.
