Spanish Paella with Shrimp, Chicken and Chorizo (for 1)


Paella is a classic Spanish dish made with seasoned rice and a combination of seafood, sausage, chicken, and other meats.  Jay’s paella starts by sauteing onions, garlic, and tomatoes, then adding Spanish chorizo sausage (browning it) and stirring in saffron, paprika, annatto, thyme, organic chicken broth, short-grain rice, and boneless chicken and bringing it all to a simmer. After about 20 minutes, sauteed shrimp and scallops are stirred in, along with minced fresh parsley and green peas. The result is a wondrous one-pot meal filled with soothing flavors and textures. 

The name “paella” refers to the “paellera”, a large pan that paella is traditionally cooked in. It looks like a flat wok.
