“Shrimp Cocktail” Gazpacho with Couscous (for 1)


Gazpacho is a summery chilled tomato-based soup with myriad variations. Jay’s recipe calls for a piquant tomato broth blended with finely chopped raw ingredients such as cucumbers, bell peppers, onion, garlic, parsley, cumin, lime juice, and a touch of olive oil.  For an appealing twist, we add cooked and chilled shrimp (cocktail style), immersed in the bowl of gazpacho, and for added texture and substance we blend in cooked couscous at the finish. #Summer’s-almost-here!
