Shrimp Risotto with Asparagus and Cashew-Basil Pesto (for 2)


Two all star dishes – skillet-seared shrimp (with garlic and sherry) and asparagus risotto – come together for this perfect early springtime dinner. Jay’s risotto includes arborio rice, sweet bell peppers, onion, garlic, parsley, white wine, and Parmesan, and gets a dollop of our signature Cashew Pesto (also includes walnuts, olive oil, garlic, spinach, and basil).

*Risotto is a creamy, slow-cooked, well-stirred Italian rice dish made with pearly white arborio rice.
