Jay’s Shrimp Scampi are flash-sauteed with garlic, olive oil, and sherry, then tossed with oven-roasted mushrooms and lightly braised arugula, and topped with fried sage leaves. Served with a side of pappardelle pasta (a wide, light egg noodle) tossed with parsley-butter. Garnished at the finish with Parmesan. #Score!
