Jay’s Shrimp Scampi are sauteed with minced garlic, olive oil, and sherry, then tossed with skillet-roasted wild mushrooms and braised spinach, then served with pappardelle pasta (wide egg noodles) tossed with parsley-butter. Garnished at the finish with toasted Parmesan and Panko bread crumbs.
