Penne Alla Vodka with Shrimp, Spinach, Mushrooms, and Ricotta (for 1)

Jay’s Penne Alla Vodka with Shrimp, Spinach, and Mushrooms is a match made in heaven. First, we make the Vodka sauce — caramelizing onions, celery, and carrots with olive oil, then adding garlic, herbs, and vodka, and simmering until the alcohol cooks off. Then San Marzano plum tomatoes are added and slow-simmered for over an hour. The robust sauce is pureed with light cream, Parmesan and tossed with penne, then combined with sauteed shrimp, spinach, and mushrooms. Garnished with a dollop of creamy ricotta.  #MammaMia
