Baked Sole ‘Meuniere’, Lemon-Garlic Butter, Butternut Squash Risotto, Market Vegetables (for 1)
Classic Sole Meuniere is a light, flaky fish seasoned with lemon, parsley, brown butter, and capers. (Typically sole is also dredged in flour, but we’re skipping that step.) We blast-roast the sole, then add parsley and lemon-pepper before serving. The fillets are accompanied by Butternut Squash Risotto (made with arborio rice, onion, garlic, celery, Parmesan, and roasted butternut squash), Lemon-Garlic Butter and Roasted Market Vegetables.
**If our supply of sole fillets runs low, we may substitute haddock. (Prefer low-carb? More veggies may be substituted for risotto, just ask in the notes section.)
