Southern Shrimp ‘n Cheddar Grits, Sweet Potatoes, *Braised Greens (for 1)


Shrimp ‘n Grits is a Southern classic. We tweaked the recipe, first by sauteing shrimp (without bacon) but with garlic, along with braised kale and collard greens (if available!) and roasted sweet potatoes. For the grits, we added Cheddar cheese and slow-cook the cornmeal (grits) until luscious and creamy.  Serves 1.  #BigEasyYum
