Southern Shrimp ‘n Coconut Grits, Sweet Potatoes, Collard Greens (for 1)


Shrimp ‘n Grits is a Southern classic. We tweaked the recipe, first by sauteing shrimp without bacon but with garlic, along with collard greens, shallots, and roasted sweet potatoes. For the grits, we added coconut milk in place of cheese and slow-cooked the cornmeal (grits) until luscious and creamy.  Serves 1.  #BigEasyYum
