Southwestern Grilled Chicken, Sweet Potato Wedges, Black Beans, ‘Elote Corn’, Brown Rice (FAMILY-STYLE, for 4)


Jay’s Southwestern-Grilled Chicken Bowl features chicken breast (marinated with lime juice, canola oil, mustard, Worchestershire sauce, gluten-free soy sauce, egg, paprika, chili powder) grilled, sliced, and served over brown rice pilaf and adorned with roasted sweet potatoes, black beans, mild Hatch green chilies, and Elote Corn (a traditional Mexican corn-on-the-cob tossed with Mexican 4-Cheese Blend, chili powder, brown butter, and lime.). The corn is served  ‘already shucked.’ Served Family-Style, for 4. 

*Traditional Elote Corn recipes call for mayonnaise but we’re using brown butter. Mexican 4-Cheese Blend includes Jack, Cheddar, Asadero, and Queso.
