Jay’s Southwestern Shrimp Salad calls for sauteed shrimp (in olive oil and garlic) chilled and layered over a bed of field greens with cherry tomatoes, shredded Jack cheese, red peppers, red cabbage and corn kernels. Jay’s Cilantro-Lime Vinaigrette (amped up with chipotles and agave syrup) is served on the side.
