Jay’s Vegetable Souvlaki Bowl features grilled and roasted vegetables (eggplant, zucchini, mushrooms, onion, broccoli) tossed lightly in a marinade of lemon juice, olive oil, garlic, oregano, parsley and thyme) and served over red and brown rice pilaf (celery, onion) and garnished with crumbled feta and parsley. A traditional cucumber yogurt sauce (tzatziki) served on the side.
