Spanikopita Egg Bowl w/ Braised Spinach, Feta, Dill, Caramelized Onions, Butternut Squash (for 1)


Jay’s Spanikopita Egg Bowl reimagines what a nourishing breakfast (or light dinner) could be: First, prepare the spanakopita by caramelizing onions, cooking them down for 20 or so minutes, then we add spinach, garlic, dill, and fresh parsley, continuing to cook until the flavors melt together, adding in feta at the last minute. Then we briskly scramble REAL eggs till fluffy, slide into a bowl, and top with the spanikopita mixture. Garnished with roasted butternut squash. So gooood!  #BreakfastofChampions
