Spice Island Chicken, Mango-Fig Chutney, Sweet Potato Pilaf (for 1)
Jay’s Spice Island Chicken is steeped in a fragrant mash of gluten-free soy sauce, wine vinegar, canola oil, green onions, thyme, parsley, brown sugar, clove, cinnamon, and nutmeg. The intensely flavored chicken is grilled and served with Jay’s Mango-Fig Chutney and Sweet Potato Rice (made with rice, onions, celery, diced sweet potatoes, and turmeric.)
*Mango-Fig Chutney ingredients: diced mangos, apples, onion, figs, garlic, wine vinegar, brown sugar, curry powder, lemon juice.
