State Fair Chicken Spiedies, Greek Village Salad, Feta, Pita (for 1)


Jay’s State Fair Chicken Spiedies are inspired by the very classic, very upstate New York summertime dish. The key ingredient is the Italian dressing-like marinade; before grilling, Jay marinates boneless chicken in an aromatic mash of fresh lemon juice, wine vinegar, canola oil, garlic, and assorted herbs (oregano, basil, mint, thyme, parsley), kosher salt, and brown sugar. The char-grilled chicken is served over a Greek Village Salad (salata) of chopped greens, tomatoes, cubed feta cheese, cucumbers, olives, slivered onion, wine vinaigrette, and a side of pita bread. #SummerTraditionsAreTheBest

*Invented in Binghamton, NY,  ‘spiedie’ (SPEE-dee) comes from the Italian word ‘spiedo’ and refers to any meat grilled on a spit or skewer. Upstate New York spiedies are typically served on a hoagie roll, but some traditions are meant to be tweaked 🙂
