State Fair Chicken is an end-of-summer ritual at JAYS2GO. Our version calls for boneless chicken marinated in lemon juice, canola-olive oil blend, Dijon, Worcestershire sauce, mayo, parsley, thyme, garlic, rosemary, paprika, black pepper, salt, and brown sugar. The chicken is grilled (and basted) over a blazing fire and served with sweet-and-tart Apple Pear Chutney (simmered with cider and wine vinegar, raisins, onions, garlic, brown sugar, and nutmeg). Accompanied by Roasted Sweet Potatoes, Green Beans, and Jasmine Rice.
