Roasted Cauliflower Dal with Chick-Peas, Autumn Vegetables, Cucumber Raita (for 1)


Dal is an Indian vegetarian curry featuring legumes and seasonal vegetables. Jay’s version calls for roasted cauliflower, carrots, sweet and red potatoes, onion, spinach, celery, tomatoes, chickpeas, garlic, cumin, curry powder, and turmeric.  We serve this hearty/chunky vegetable dal with a soothing cucumber-yogurt raita. #EarlyFallFlavors
