Dal is a classic Indian curry vegetarian stew featuring legumes and seasonal vegetables. Jay’s hearty version calls for roasted cauliflower, parsnips, carrots, zucchini, sweet and red potatoes, onion, spinach, kabocha squash, chick-peas, garlic, cumin, garam masala, curry powder, and turmeric.  We serve the vegetable dal with a side of cucumber-yogurt raita. A delicious plant-based meal!
