Dal is a classic Indian curry vegetarian stew featuring legumes and seasonal vegetables. Jay’s version calls for butternut squash (cubed), cauliflower, carrots, sweet and red potatoes, onion, red kale, zucchini, tomatoes, chick-peas, garlic, cumin, curry powder, and turmeric.  We serve this hearty/chunky vegetable dal with a side of soothing cucumber-yogurt raita.
