Tandoori Grilled Chicken, Sweet Potato Dal, Yellow Basmati Rice (for 1)
Grilled Tandoori Chicken (boneless white and dark meat) is marinated overnight in a yogurt mixture seasoned with coriander, cumin, paprika, turmeric, fresh ginger, garlic, lime juice, and cilantro, then char-grilled. The tandoori chicken is served with Sweet Potato Dal, a warm side dish made with well-cooked red lentils, curry, garlic, onion, carrots, and sweet and red potatoes. Yellow Basmati Rice nicely soaks up the flavors of both the tandoori and the dal.
Tandoori chicken is an Indian dish traditionally prepared by roasting chicken marinated in yogurt and aromatic spices in a tandoor, a cylindrical clay oven. Yogurt imparts a tangy flavor and complements the dish’s fragrant spices. We use beet juice to impart the traditional reddish hue (in place of red food coloring.)
