Red Curry Beef w/ Broccoli, Braised Bok Choy, Jasmine Rice (for 2)


For this intensely favored dish, we combine char-grilled sirloin steak (sliced thin) along with roasted broccoli, bell peppers, mushrooms, and sturdy greens (bok choy, kale, spinach). Separately, we prepare Jay’s Red Curry Sauce – made with coconut milk, garlic, ginger, onion, bell peppers, gluten-free soy, cumin, lime juice, and a piquant red curry paste.  To assemble your dinner, in a large skillet or wok reheat the beef and vegetables (with a little oil), add in the red curry coconut sauce and bring to a simmer, stirring. Meanwhile, reheat the jasmine rice in a microwave.  When the beef-curry mixture is simmering, serve with (or over) jasmine rice.
