Jay’s version of fried rice includes chewy brown rice tossed with an assortment of vegetables (bell peppers, green onions, broccoli, green peas, rainbow kale, and asparagus).  To flavor this nutrient-dense dish we add ginger, garlic, sesame oil, gluten-free soy sauce, threads of fluffy scrambled eggs, and top it off with cubes of sesame-roasted tofu.
