Vegetarian Borscht with Sour Cream (24 oz, for 2)


Borscht is an Eastern European soup traditionally made with beets and hearty vegetables. We’re skipping the meat and doubling down on the vegetables – adding celery, carrots, leeks, potatoes, beet greens, cabbage, tomato paste, herbs (dill, thyme, parsley), and garlic.  We puree the soup and serve as a bisque with a dollop of sour cream on the side. Serves 24 oz, for 2.
