“Pastaless” Vegetarian Lasagna w/ Roasted Eggplant, Spinach, Ricotta, Marinara, Polenta Crust (for 1)


Jay’s “Pastaless” Lasagna starts with a hearty marinara with San Marzano plum tomatoes, onions, carrots, zucchini, garlic, and basil. Next up, we slow-cook the cornmeal polenta crust, followed by the filling:  ricotta, mozzarella, provolone, parmesan, spinach, and eggs (for binding). The lasagna is built one layer at a time: polenta ‘crust’, then marinara, slices of roasted eggplant, ricotta mixture, another layer of roasted eggplant,  then topped with more sauce and mozzarella. #Magnifico! #StackedHigh!
