Vegetarian White Bean Chili with Tillamook Cheddar (for 1)


There’s a cold wind blowin’ in next week! Just in time for Jay’s Vegetarian Chili; the ‘bowl of red’ starts with sauteed celery, onions, zucchini, carrots, bell peppers, and garlic, then we add crushed and stewed tomatoes, white and red beans, kale, chili powder, cumin, coriander, paprika, black pepper, salt, and parsley. Slow-cooked, not too spicy; just right!  Topped with melty shredded Tillamook cheddar at the finish.
