Roasted Cauliflower ‘Wedge’, Whole Carrots, Red Lentil Hummus (for 2)


Cauliflower is the new….cauliflower. It is a versatile vegetable with myriad ways to enjoy it.  For this light meal, we thickly slice a whole cauliflower head cross-wise, then roast it with young carrots (sprinkled with olive oil and sea salt.)  We then prepare a luscious red lentil and chickpea hummus (made with lemon, garlic, tahini (sesame-seed paste). You spoon the hummus over the warm vegetables. It is sooo simple yet delicious…..and best of all, tastes like SUMMER!
