This nutrient-dense dinner salad starts with flash-roasting wild salmon fillets with lemon and parsely- butter, blast-chilling, then serving over a salad of power greens (spinach, arugula, baby kale, Romaine) and adorned with cherry tomatoes, carrots, feta cheese, and rainbow quinoa tossed in like confetti. A mild rice vinegar- and-oil vinaigrette served on the side.
