Wild Salmon w/ Parsley-Shallot Butter, Roasted Cauliflower and Carrot Risotto (for 1+)
Jay’s Wild Salmon fillets are blast-roasted at 425°, spritzed with lemon, butter, and paprika, and served over roasted cauliflower risotto (made with pearl-shaped arborio rice, slow-cooked with onion, garlic, celery, roasted cauliflower and carrots, and Parmesan cheese) and joined by our fresh shallot-parsley-lemon compound butter. The salmon melds wonderfully into the soothing bed of risotto.
