Wild Salmon w/ Chive-Lemon Butter, Roasted Cauliflower and Sweet Pea Risotto (for 1+)
Jay’s Wild Salmon fillets are blast-roasted at 425°, spritzed with lemon, butter, and paprika, and served over cauliflower-sweet pea risotto (made with pearl-shaped arborio rice, slow-cooked with minced onion, garlic, celery, roasted cauliflower, green peas, and Parmesan cheese) and joined by our fresh chive-parsley-lemon compound butter. The salmon melds wonderfully into the soothing bed of risotto.
