Madhur Jaffrey’s Chicken Tikka Masala (for 1)
Madhur Jaffrey’s Chicken Tikka Masala is a popular British adaptation of a classic Indian dish. Boneless chicken (white and dark meat) are marinated overnight in lemon juice, ginger, garlic, cumin, paprika, yogurt, and garam masala. Separately, a masala sauce is made with ghee-sauteed onions, ginger, garlic, turmeric, cumin, coriander, paprika, light cream, carrots, and pulpy tomatoes. To complete the dish, the chicken tikkas are grilled, cubed, and combined with the masala sauce and braised spinach. Served with jasmine rice and garnished with roasted broccoli or cauliflower.
